welcomes new Executive Chef Paul Scandura

As former Executive Chef Ruben Gomez moves west to open his own restaurant in Guerneville - Chef Paul Scandura, formerly of The Backyard in Forestville, moves less then a mile south to Corks at Russian River Vineyards to become their new Executive Chef.

Transitions can be challenging for restaurants when one chef leaves and another is sought to take his/her place, but this one segued smoothly, especially since Paul had already been working with Russian River Vineyards farmer Kayta Brady. Her farm at RRV provides fresh produce for Corks and several other local restaurants, as well as for the Forestville Certified Farmers Market at RRV that starts every Tuesday at 4pm on June 2nd.

Paul's passion for the kitchen started at a young age, when he learned to cure salumi at a Fretta's Italian Specialties in his hometown of Millford, Pennsylvania. His formal training comes from the Culinary Institute of America in Hyde Park, New York.

Paul worked in a few of the best restaurants in the Napa Valley before coming to Sonoma County. Having traveled extensively in the Middle East & Asia, he became fond of a broad spectrum of herbs and spices to enhance vegetable dishes, one of his specialties. Kayta's farm is one of the reasons Paul found working at Corks so enticing.

"I want the kitchen to be an extension of the amazing produce Corks' farmer, Kayta Brady, is growing on the property. Where Kayta's art ends, mine begins." 

"We see this transition as the next step in our goal to be the best destination winery in Sonoma County by featuring award winning wine, farm to table dining, and sustainably grown, seasonal produce from our estate farm," says owner Chris ONeill.

Chris has done a remarkable job of bringing the former Topolos Russian River property from a state of seriously deferred maintenance to a thriving restaurant and farm. The wines of Russian River Vineyards have been garnering praise and awards under the care of Giovanni Balistreri and Anthony Austin. This is a story of perseverance  to success...the essence of entrepreneurs in their element.

We look forward to Paul's new menu and his partnership with this thriving venture in West Sonoma County.
